Mexican foods seem to fuse and blend easily with the flavors and textures of other parts of the world. Mexican pizza, pancakes, cheeses, tortillas, chicken, fish, and salads seem to combine easily with Indian and Asian as well as Italian specialties. The American melting pot may be a last-century phenomenon, but Mexican foods are becoming as American as lasagna, wontons, and bagels.  An opportunity has arisen for consultants to become a “White Collar Franchise’ of the WSI where they benefit from a proven blueprint of success which they can convey to small and medium-sized businesses in their community.
